Olive Gardens Chocolate Ricotta Pie Recipe

Ingredients

  • 1 1/4 cups graham cracker crumbs
  • 2 1/2 ounces butter, melted
  • 2 tbls. sugar
  • 1 pound ricotta
  • 3/4 cup powdered sugar
  • 1 tsp. almond extract
  • 1 cup almonds, toasted
  • 1/2 cup semisweet chocolate chips
  • 1 1/4 cups heavy cream
  • Mix graham crackers, butter, and 2 tbls. sugar together
  • Shape into 9-in. pie plate
  • Bake at 350 for 10 minutes
  • Let chill

Instructions

  1. In large bowl add ricotta, sugar, and extract and mix until blended
  2. Put nuts and chocolate into processor and pulse until all ground up ( Do Not grind fine)
  3. Fold into cheese mixture and chill
  4. Whip heavy cream until stiff
  5. Fold into ricotta and chocolate mix half at a time
  6. Spoon into chilled crust and let chill overnight
