Chicken & Potato Bake Recipe

Ingredients

  • 2 1/2 to 3# frying chicken pieces skins removed (optional)
  • 3 large potatoes cut into wedges
  • 2 medium onions, diced
  • 1 1/2 tsp. garlic salt
  • 1/4 tsp. pepper
  • 2 (14 1/2-oz) diced tomatoes (drained)
  • 1/4 cup chopped parsley

Instructions

  1. Preheat oven to 350 degrees
  2. Place chicken pieces in a 13x9x2 inch baking dish
  3. Arrange potatoes over chicken; top with onion
  4. Sprinkle garlic salt & pepper evenly over onion
  5. Spoon tomatoes over dish & top with parsley
  6. Cover with foil & bake @ 350 degrees for 1 1/2 hr. or until
  7. chicken is no longer pink in the center & potatoes are tender
