Baked Applesauce Donuts
Ingredients
- Nonstick cooking spray
- 1 c. all-purpose flour
- 3/4 tsp. baking powder
- 1/2 tsp. apple pie spice
- 1/2 tsp. kosher salt
- 4 tbsp. unsalted butter, at room temperature
- 1/4 c. packed dark brown sugar
- 2 tbsp. granulated sugar
- 1 large egg, at room temperature
- 1/2 tsp. pure vanilla extract
- 1/3 c. Easy Homemade Applesauce or store-bought applesauce
- 3 tbsp. whole milk
- 1/3 c. granulated sugar
- 1/2 tsp. apple pie spice
- 1 tbsp. unsalted butter, melted
Instructions
- Heat oven to 350°F. Coat 6-cavity donut pan (31/4-inch-diameter cavities) with nonstick spray.
- In bowl, whisk together flour, baking powder, apple pie spice, and salt. In stand mixer on medium, beat butter and sugars, scraping bowl halfway through, until light and fluffy, 2 to 3 minutes. Beat in egg and vanilla until incorporated, then applesauce. On low, add half of flour mixture, then milk; beat until just combined. Beat in remaining flour mixture until just combined.
- Transfer batter to large piping bag and pipe into prepared pan, filling each cavity three-fourths full; using wet finger, smooth tops. Bake, rotating pan halfway through, until wooden pick inserted in center comes out clean, 20 to 22 minutes.
- Meanwhile, make coating: In bowl, combine sugar and apple pie spice. Let donuts cool 1 minute; carefully remove from pan. Working with 1 donut at a time, lightly brush with melted butter and coat in spiced sugar. Transfer to wire rack and serve.
