Crustless reduced sugar Pumpkin Pie

Ingredients

  • 2 Eggs beaten
  • 1 cup ricotta cheese
  • 0.75 cup milk
  • 0.333333333333333 cup Splenda for baking or 2/3 cup sugar
  • 1 tsp Vanilla
  • 0.5 tsp Salt
  • 1 tsp Cinnamon
  • 0.5 tsp Cloves
  • 0.5 tsp Nutmeg
  • 0.5 tsp ginger
  • 1 tbsp butter softened
  • 0.5 cup Biscuit baking mix like Bisquick
  • 1 15-oz can Pumpkin

Instructions

  1. 1. Preheat oven to 350 degrees. Coat 9 inch deep-dish pie plate with non stick cooking spray.
  2. 2. Blend all ingredients together in blender on high speed for 1 minute, or place all ingredients in large bowl and beat 2 minutes with a hand beater.
  3. 3. Pour mixture into pie plate.
  4. 4. Bake 50-60 minutes, or until a knife inserted in center comes out clean.
  5. 5. Let cool then cover and chill about 2 hours before serving.
